Carnaroli Superfino rice from Riso Carena with its large grains is creamy - not sticky - and far superior to arborio rice for risotto and baked rice dishes. "Le Mondine" refers to the women who worked in the rice fields during the harvest. The literal translation is "rice weeders" as this was the bulk of their responsibilities.
