The sweetness of the Balsamic, the sharpness of the vinegar, and the mustard of the mustard mustard combo makes for a passing back and forth of tones. Then the fig and dates come through while you play with the un-crushed seeds. It really is an interesting flavor and though I wouldn't call it complex, it definitely entices you to taste
