Produced from organically cultivated young vines which are ten years old, the Young Vineyards Limniona from Christos Zafeirakis is a fruitier, more ethereal, version of Limniona. Zafeirakis is an evangelist of spontaneous fermentation and large oak barrel maturation. He uses five ton oak barrels for 12 months maturation, resulting in an undetectable oak; cloudlike, and almost invisible.
